What We Ate: Easter Day


Hello there! Today was a lovely Sunday full of great weather and good food with my family. Recently I transitioned from vegetarian to vegan and it feels really good. It is such a myth that vegetarians and vegans don’t eat great and exciting food. Since I am the only vegan in the house, along with a mini-vegetarian, and a carnivorous husband, I sometimes have to make two different dishes or half and half a dish. Most times neither. Today my hubby wanted “buttery” cinnamon rolls so I obliged him and made some grand buttery cinnamon rolls with chopped almonds for him. I made the same for myself, but veganized it. Below are pics of today’s menu.

Homemade cinnamon rolls. We don’t put icing on them because they are delicious on their own. Plus, it’s a way to cut some calories/fat/sugar.

No photos (sorry), but I made breaded cauliflower and we ate leftover vegan corndogs.

My husband made chilli. The man only makes a few dishes, but they are GOOD.

This was so exciting! I made vegan chocolate peanut butter eggs! I modified a recipe from the website Chocolate-Covered Katie (she makes AMAZING desserts). Instead of making my own chocolate I melted some “Enjoy Life” chocolate chips and dipped the peanut butter eggs in.
