Today The Vegan Soulfood Guide to the Galaxy arrived in the mail! It’s a book by the lovely Afya Ibomu (see her interview here). This is a really unique book in that it veganizes several “soul food” dishes like buffalo wings, potato salad, hush puppies, and more. A dvd also came with the book which shows Afya demonstrating 3 of the recipes found in the book. In the coming days I am going to try the “buffalo tofu.” Everything seems so delicious! For the most part, I don’t miss meat, but every once in a while when I smell some fried chicken or barbequed beef I reminisce. I never really thought about broiling or deep-frying tofu (in natural shortening with no hydrogenated oils), but I like the idea. Well, to the galaxy and beyond!
