~Raw Chocolate Chip Cupcakes~

Hey there. I am giddy right now in anticipation of eating these cupcakes! The recipe was derived from the book Pure Pleasures: Cupcake Heaven, a book that contains all raw vegan cupcake recipes. I never would have thought that you could make cupcakes without eggs, butter, or baking! The flour used is coconut flour and the cupcake base includes apples (blended in a food processor), lemon juice, vanilla bean, vanilla extract, coconut oil, agave nectar, and cacoa nibs (in place of milk chocolate chips). The “icing” or ganache is made with cocoa powder, coconut oil, agave nectar, and maple syrup (my addition since i ran out of agave nectar). The ganache was extremely quick and easy to make and I had to rinse the bowl out immediately to keep from licking it clean. I put the cupcake base in cupcake tins and put them in a muffin pan, pressed the mixture into the cups and up the sides, then placed the pan in the freezer for about an hour. I then removed the cupcake bases from the cups and placed them on a baking sheet and applied the ganache. They are currently “setting” in the refrigerator for an hour or so and then they’ll be ready to eat. I plan to immediately devour two of these once they have set!

I’ve mentioned before that I currently try to eat predominantly raw or vegan desserts. About 90% of the desserts I consume are either raw or vegan. I am doing this because I recognize that I have a major sweet tooth and I do not want to gain weight and be unhealthy because of it. There is less fat and no cholesterol in these desserts, plus they are much more nutrient rich. I have about two desserts a week and I am actually losing weight. Of course I try to generally eat good and exercise regularly as well. Well, if I have made your mouth water my job is done here! 😉
