While shopping at whole foods stores I sometimes look at their pre-made food options to get recipe ideas. I’ve reinvented a lot of cool recipes that I’ve found. Recently a vegan egg salad made with tofu caught my eye. I purchased it, but did not love it. But I still liked the idea so I decided to make my own tofu salad. I used less ingredients and I think mine turned out great.
1 package firm/extra firm tofu
1/4 cup onion
1/4 cup dill pickles (I pickled my own cucumbers to make dill pickles!)
1 tsp capers
2 heaping tablespoons of veganaise
*Adjust the recipe to your liking.
Place the tofu into a medium bowl and mash the tofu into medium sized chunks. Chop the onion and dill pickles and add them to the tofu. Then mash the capers and add them to the bowl. Last, add the veganaise. Mix ingredients and serve!
