I forgot that October 16 was World Food Day! I feel so grateful that I am fortunate enough to have plenty of food and to able to buy healthy, quality food. There are a little under 1 billion people in the world who do not have sufficient food and millions who are malnourished and/or starving. I find this incredibly saddening. It makes me angry to think about all of the grain and water that animals raised for food consume that human beings should have. I digress, but it’s important to recognize the privilege that exists in having sufficient food. On a happier note, I promised I would post a picture of my Fall/October dessert: pumpkin bread pudding. Well, I put a spin on this dish and made a pumpkin custard and placed toasted pumpkin bread pieces on top. The custard is similar to a pumpkin pie filling, but a bit more smooth. I even found some soy whipped cream to add on top. The entire dish is dairy and egg-free (vegan).
