Whenever Fall rolls around, particularly October, I begin to think PUMPKIN! I usually make a pumpkin pie (from scratch), but this year I’ve decided to switch things up a bit. I’m going to make an African dish: pumpkin bread pudding! I’m salivating at the thought, are you? I won’t even pretend that the dish will even be relatively healthy because it won’t be! It will contain milk, cream, and eggs so I’ll have to take my lactose pill with this dessert, but I think it will be sooooo worth it! I’m going to serve it to my little family in custard cups so it will look something like this:

minus the whipped cream on top. I’ll definitely post the pics of this dish when I make it in a week or so. My husband’s family has a traditional dinner recipe called “Pumpkin dinner” in which you cut the top off of a pumpkin, scoop out the middle and put veggies, ground beef, and tomato sauce inside. Then you bake it. It was very yum last year, but this year me and my dear will make individual pumpkin dinners so that I can put faux ground beef in mine. I’m going to make some pumpkin bread to conclude my pumpkin fiasco. For my little bug, I’m going to buy a couple of small pumpkins and let her paint them for Halloween. It may look something like this:
There are so many things you can do with pumpkins so if you have some free time, do a little experimenting. Baked goods from fresh pumpkins taste absolutely divine, but canned pureed pumpkin (organic if you can) is also delicious. Here are a few other things you can do/make with pumpkins:

  • Roasted/candied pumpkin seeds
  • Pumpkin pancakes/muffins/scones
  • Visit a Pumpkin Patch near you
