1-2 sweet potatoes (peel and chop coursely)
1/3 cup scallops (chop)
1 tbsp red pepper flakes
1/4 cup vinegar
2-3 tbsp cranberries
1/4 cup brown sugar
1/4 tsp ginger powder
Each of the amounts will vary depending on how much you make. Of course adjust ingredients to meet your own preferences. For instance, I added less red pepper flakes (spicy!) and used apple cider vinegar instead of white vinegar.
First mix scallops and red pepper flakes together in a small bowl. Then place them in a medium skillet adding the brown sugar, vinegar, ginger, and cranberries. After you’ve mixed those ingredients together in the pan, began to warm them using medium heat. Add the sweet potatoes. Stir all ingredients together and bring to a boil. Reduce heat and simmer for 10 minutes (or until sweet potatoes are firm, but easy to bite into. Then enjoy!

For lunch today, I ate it alone. Vegetarians and vegans can add rice or couscous and make a meal out of this as well. 😉
